Thriving Mocha was once Arabia's largest trading port, and the popularity of the coffee it exported - mocha coffee - has extended from 17th century Europe until present day, long after the port itself had vanished in the sand.

Renowned French leader Napoleon Bonaparte (1769-1821) lowed coffee so much he gave it to his troops. It is believed the personal connections he formed during frequent visits to cafes from his days as a soldier provided the foothold for his later success.

A coffee house established in 1554 in Constantinople (now Instanbul) is thought to be the world's oldest coffee shop. People loved gathering there and talking freely, and therefore called it, kahve kanes - the house of coffee.
Thanks to UCC for the story!

You can have coffee in your cake, coffee in your gelato, and coffee in your wonderfully art deco Miam Miam Mug, but have you ever thought about coffee on your wall? Artists world wide have begun dipping their brushes in coffee and covering their canvases with intricate masterpieces. Coffee painting is not a new art form by any means, but recently it has been sweeping the globe and increasing in popularity. Not only is it appealing to the eye and smells great, it is a great medium for any artist…

For many people coffee has a lot to do with chocolate; and to some women, it is more of a best friend than diamonds ever will be. Those of you who have enjoyed the intense comfort of a café mocha know exactly what I am talking about. Many people over the course of many centuries have had this same remarkable love of chocolate; it has been used as currency, and even has become synonymous with feelings of love. But how did this all start exactly? When did the human race start its love affair with…

Sometimes a cup of coffee is more than a caffeine buzz, though there are some that might be shocked at the thought. If you are one of those who love the taste of coffee but can’t always have the caffeine, maybe you’ve wondered how the decaffeination process works or what else has been taken away from your coffee besides the jitters. There are many different compounds and chemicals in coffee that make up its taste and caffeine is actually one of those. Caffeine doesn’t have a very big impact on t…

Lately, as I have been dealing a lot with coffee beans and watching my boss roast them, I realized that one of the things that I find most fascinating about the history of coffee is that people figured out the process of roasting in the first place. In order to enjoy coffee the way that we do today it has to first be roasted; a green coffee bean does not have the same wonderful taste as a roasted bean, while it does have about the same amounts of caffeine, protein, and acid.
The roasting process…

Recently, as Jaho has started roasting its own coffee, I have been exposed to new types. One of these that certainly demands attention is Kona coffee from Hawaii. This special bean is sought after all over the world for its rich flavor that is unlike anything else on the coffee market. Kona coffee comes from the Kona districts of Hawaii, which is on the biggest island and includes the slopes of Mauna Loa and Mount Hualalai. Only coffee grown in the Kona district can legally be labeled as Kona. H…

If you have ever been to Jaho Coffee and Tea you have probably seen them, the ghosts of hearts and leaves woven in with your espresso and steamed milk. While beautiful to look at you might never guess the following that these floating designs have, that all over the country there are competitions where the best design could win $5,000 or a variety of other prizes. In fact, Jaho’s own Anil Mezini will be headed to Coffee Fest in Chicago this month to wow the windy city with his latte skills.

Just like fine wines, gourmet coffee has its own specific types of guidelines that help us rate its quality. These guidelines outline a process called coffee cupping and it is coffee’s equivalent to wine tasting. This process is used for the buying and blending different coffees, so when it occurs it is a ceremony where the guidelines are followed closely and seriously. Having a general idea how this process works is not only a good way to get to know the coffee that you are drinking, but it is…

Every morning over my cup of dark roast I’m reminded of Kaldi, the goatherd who first discovered the miraculous properties of coffee in what we now call Ethiopia. I feel like I owe him my thanks, and I’m sure that a good chunk of the population would feel the same way if they knew his name and his story.
The story goes that while his goats were grazing in the mountains, Kaldi fell asleep. When he woke up, he saw that his goats had wandered off, and upon finding them it’s said that they were acti…

It seems about time that I came to the subject of tea, as it is also an important facet of Jaho, where we carry about a hundred different types of loose leaf tea. Tea is coffee’s diverse counterpart, and the two of them have ruled the hot beverage market for hundreds of years. Because tea is an ancient beverage, it is surrounded by many myths and legends. The first tea plant is said to grow from the eyelids of an enlightened man, when he cut them off after falling asleep while meditating.
The qu…

When I first saw it set up, I thought someone had pulled it off the set of Star Wars. Modern and sleek, the Hikari Siphon Bar is truly a beautiful thing. Covered in bright halogen lights and shiny glass bulbs, it is something that needs to be seen to be believed. There are only two of these in the United States, the first belongs to the west coast, and I was standing in front of the second one; the one that had just found its home on the east side if the country.
The coffee siphon is a science t…

I remember distinctly every morning how my father would pour himself a mug of black-brown liquid before work. Though intimidated by the color and the idea that it was a “grown up drink”; I was intoxicated by the smell that had become such a regular part of my morning routine. Once, I worked up the courage to ask my father for a sip of his beverage and was shocked when he replied, “Nah kid, it’ll stunt your growth.”
He burst out laughing at my confused face and pushed his mysterious drink across…

Before coffee is dried, roasted and ground, it is carefully grown as a cash crop in countries all over the world. This incredible plant favors high elevations in tropical regions making it an ideal crop for most of south and Central America, parts of Africa and Indonesia.
There are several different types of the coffee plant; some seem relatively tame while others are so completely bizarre I will promise to write about them later. But, the two biggest names in the world coffee market are Arabica…
